Earl Grey
In 1833 Earl Grey, the Earl of Howick Hall, at that time the British Prime Minister, suspended the price monoply which the East India Company had over the tea trade with China.
The originally pure Chinese tea was lightly flavoured with fine and uplifting Bergamot oil. The additional fragrance which was provided by the Chinese was intended to protect the tea from the taste of mould and tar which could arise from the long voyage at sea to Royal England.
Little did they know that they had created one of Englands finest and most favoured teas - named in honour of Earl Grey.

Yame Houjicha
The production of Japanese Houjicha is similar to the green tea process (steaming, drying, shaping) then a fourth step is added. The green tea is roasted by an experienced tea master above a charcoal fire, from which this tea gets its distinctive taste - smooth, earthy and slightly malty and upon brewing reveals a deep golden cup.
The roasting process also diminishes the tannin and caffeine content of the leaves.
Yame Houjicha has a pleasant mild character and is very popular ice tea in Japan.
